Emergency repairs whilst the office is closed are 48 hour response but potentially quicker in some areas and circumstances. Christmas repair requests MUST be sent by Whatsapp or text message to ##### ###### (do not ring this number). Please provide site address, contact details for arranging access and details of the problem you need fixing.

Callouts will be charged at £2.50+VAT per mile plus parking and congestion charges, minimum callout charge of £80+VAT. Labour will be charged at double our normal labour rate (as always the minimum charge is 1 hour and labour will rounded up to the nearest half hour). Attendance on Christmas Day, Boxing Day, New Years Eve and New Years Day will be charged at triple our normal labour rate. Any parts required will be normal prices.

Turbo cone upgrade (TUBCN)

Far East’s fan-assisted turbo burner has been a popular choice for many years because of its combination of reliability, performance, ease of use and service backup – but we’re always looking for ways to improve our products now we’ve made our turbo even better! This improvement comes with all new turbos as standard, but it can be retrofitted by end users to our many existing CE Turbos at minimal cost too.

The new stainless steel “turbo cone insert” (TUBCN) replaces the horseshoe plate (cast iron or stainless steel) that sits in the bottom of the cooker turbo ring; it reduces cooking time by around 15% whilst also collecting spillages and providing additional heat shielding for components. If you need a cast iron ring too, search for “XTRAO“.

Other improvements on our latest turbo burner design include a redesigned pilot and ignition system with improved drainage and shielding that will tolerate water splashing and cleaning.

Rear shelves on CEFT wok cooker (XTRAJ)

As of December 2020 the rear shelf design has been updated and the information in this post is no longer accurate. All CEFT wok cookers now come with one or two piece rear shelving that covers most of the width of the unit, the exact sizes can be seen in the plan drawings

XTRAJ clip-on rear shelf attached to top of splashbackFar East’s wok cookers have always come with a full width shelf at the rear as standard, mounted across the top of the backsplash, sometimes referred to as a “spice rack”. However, customers have told us the length of these can make them difficult to remove for cleaning, and they are often much larger than required, so we have updated the design.

All new CEFT wok cookers will come with clip-on backshelves (XTRAJ) that are 450mm wide and 175mm deep. These have several benefits:
• Fit inside commercial dishwashers for easy cleaning
• Easier to remove and handle
• Improve air flow around the cook top, particularly around the rear burners
• Can be slid along the backsplash to desired position and other accessories (such as a ladle holder) placed in between

We include some of the new XTRAJ backshelves as standard. If you don’t need them all, we’ll knock £80+VAT off the price for each one you don’t have, and if you need extra, they’re just £80+VAT each.
• CEFT21 includes 1 XTRAJ 450mm clip-on backshelf
• CEFT32 includes 2 XTRAJ 450mm clip-on backshelf
• CEFT43 includes 2 XTRAJ 450mm clip-on backshelf
• CEFT54 includes 3 XTRAJ 450mm clip-on backshelf

Recessed undermount wok burner

We have just completed this special commission for ExclusiveRanges to integrate a powerful wok burner in to a Capic cabinet, with a high standard of finish. The wok burner has been undermounted as a recessed fit and then fully welded to the Capic cabinet, with all controls neatly integrated in to the front facia. It has wet-type water-cooled cooktop so a waste drain with filter basket and double-jointed water spout have also been fitted in to this custom bespoke unit.

Carbon dioxide (CO2) in commercial kitchens

Vent/extract is important! Even low levels of CO2 have adverse effects.

This video explains that even at 1400 ppm high level thinking can decrease 50%. The presenter is stood in 6000+ppm and experiences some unpleasant side effects of CO2. Kitchen ventilation/extract is important, both the initial design and on-going maintenance, to ensure there is a healthy environment for kitchen staff.

In GB, CO2 is classed as a ‘substance hazardous to health’ under the Control of Substances Hazardous to Health Regulations 2002 (COSHH). The HSE publication ‘EH40/2005 Workplace exposure limits’ provides workplace exposure limits (WELs)… to airborne concentrations of hazardous substances in the workplace and are set in order to help protect the health of workers:

  • Long-term exposure limit (8-hr reference period) of 5000 ppm [Gas Safe Immediately Dangerous level]
  • Short-term exposure limit (15 minute reference period) of 15000 ppm

Gas Safe and Health & Safety Executive (HSE) set limits on Carbon Dioxide (CO2) levels in commercial kitchens. These are tested as part of the gas safety certificate check, where all gas appliances are run at full power for 10 minutes and the air quality measured near the edge of the extract canopy:

  • Levels above 2800 ppm CO2 are noted as AR At Risk.
  • Levels above 5000 ppm CO2 will be ID Immediately Dangerous so kitchen will be closed until CO2 levels can be reduced.

An obvious sign of excessive CO2 is a discoloured ceiling.

Research indicates that repeated exposure to CO2 levels in excess of 5000 ppm for extended periods can cause long term health effects, this is why the HSE imposes their limits and they are particularly relevant to staff in commercial kitchens who are likely to spend 8+ hour shifts in exactly these conditions. If CO2 exceeds 5000 pm then unused burners can be capped, more powerful air extract fan fitted and/or improved fresh air provision will reduce CO2 back to safe levels.
