Carbon dioxide (CO2) in commercial kitchens

Vent/extract is important! Even low levels of CO2 have adverse effects.

This video explains that even at 1400 ppm high level thinking can decrease 50%. The presenter is stood in 6000+ppm and experiences some unpleasant side effects of CO2. Kitchen ventilation/extract is important, both the initial design and on-going maintenance, to ensure there is a healthy environment for kitchen staff.

In GB, CO2 is classed as a ‘substance hazardous to health’ under the Control of Substances Hazardous to Health Regulations 2002 (COSHH). The HSE publication ‘EH40/2005 Workplace exposure limits’ provides workplace exposure limits (WELs)… to airborne concentrations of hazardous substances in the workplace and are set in order to help protect the health of workers:

  • Long-term exposure limit (8-hr reference period) of 5000 ppm [Gas Safe Immediately Dangerous level]
  • Short-term exposure limit (15 minute reference period) of 15000 ppm

Gas Safe and Health & Safety Executive (HSE) set limits on Carbon Dioxide (CO2) levels in commercial kitchens. These are tested as part of the gas safety certificate check, where all gas appliances are run at full power for 10 minutes and the air quality measured near the edge of the extract canopy:

  • Levels above 2800 ppm CO2 are noted as AR At Risk.
  • Levels above 5000 ppm CO2 will be ID Immediately Dangerous so kitchen will be closed until CO2 levels can be reduced.

An obvious sign of excessive CO2 is a discoloured ceiling.

Research indicates that repeated exposure to CO2 levels in excess of 5000 ppm for extended periods can cause long term health effects, this is why the HSE imposes their limits and they are particularly relevant to staff in commercial kitchens who are likely to spend 8+ hour shifts in exactly these conditions. If CO2 exceeds 5000 pm then unused burners can be capped, more powerful air extract fan fitted and/or improved fresh air provision will reduce CO2 back to safe levels.

Despite our best efforts at snow clearance and gritting yesterday, we had another 3″+ overnight (on top of the 2″+ we got yesterday) and staff have been unable to reach the office, so it is closed today. Snow continues to fall but we hope to be open as usual tomorrow. Sorry.

Another pair of CEFT wok cookers for Martin’s Food Equipment (MFE) of Ireland, specified with knee-operated taps. the owner is happy because their water bill has dropped dramatically and the chefs are still happy because it keeps their hands free; these taps are spring loaded with no time delay, requiring constant pressure from the knee to allow water flow, so staff cannot leave them running constantly in to an overflowing container. The shower rail at the rear of the cooker has retained its ordinary lever handle to allow easy filling of the water bath.

Don’t have a grease trap?

[Thames Water] sent teams to visit more than 700 restaurants to explore what steps they’re taking to stop the flow of fat leaving their kitchens. The answer? The vast majority are doing nothing at all… this is not through wilfulness but ignorance. There are devices to trap fat, and they cost only a few hundred pounds, but few seem to have heard of them. Water suppliers are cracking down on restaurants and takeaways putting grease down drains, often sending bills of thousands of pounds for blockage removal. Protect yourself quickly and cheaply with a grease trap.

There are many grease traps/interceptors, dosing systems and recovery devices on the market for dealing with FOG (Fats, Oils and Greases); Far East offer a good compromise between price, filtering ability and size, a quality free-standing unit which can be easily retrofitted to existing waste pipes by most plumbers. We’ve found cheaper solutions require emptying more often but do not filter as well.

We suggest the largest grease trap you can fit, so emptying frequency can be reduced. Also, small traps may be overwhelmed by simultaneous large discharges (0.5 L/s for smallest traps vs 2 L/s for larger traps). These traps are airtight sealed but malodour can be present during emptying, so placement outside may be preferable. The solids mesh filter will typically need emptying every other day and the oil will require skimming at least weekly, fine solids may settle in the bottom over time and require removal. These are gravity fed systems so the entrance to the grease trap must be lower than the pipes feeding it. Prices correct as of December 2017, exclude VAT and delivery
